Easy Leftover Risotto Balls

Pairing anything with a cube of mozzarella will likely enhance the dish overall, right? When you add frying to the mix, things become even more appealing. Luckily, we have all of that in this risotto balls recipe.

Leftover rice ideas can vary quite a bit, so don’t be surprised to see pudding next to fried risotto balls on this list.

Ingredients

  • 3 cups of risotto ( up to 4)
  • Four eggs
  • 2 cups flour
  • 2 cups breadcrumbs
  • 2 ounces mozzarella (or cheese of your choice)
  • 2 cups vegetable oil
  • 3/4 tsp kosher salt

Instructions

To help you make these leftover rice ideas as painlessly as possible, we’ve separated the instructions into tasks manageable for even the amateur chef.

Step 1

We’ll start the production of this dish by separating the eggs. Once the yokes and the whites are separated, you can whisk the egg whites until frothy.

Set two of the yokes on the side until we need them, and mix the remaining two into the leftover risotto.

Step 2

Setting up a dredging station is the next step. Mix the flour and the salt in a bowl. Then, place a bowl of breadcrumbs next to it. Also, line a baking sheet with a double layer of paper towels and set everything on the side.

Step 3

It’s time to shape and stuff the risotto balls. Start by dividing the rice into 2-tablespoon portions. Then, form them into balls.

Take a cube of cheese ( in our case, mozzarella) and stuff it into the middle of the rice, making sure that the entire cube is covered.

Place a piece of parchment on the counter and start placing the risotto balls onto it.

Step 4

Dredging the balls is your next course of action. The first step in this process is dipping one ball into the flour and making sure it is coated. Then, transfer the ball to the egg white with the same rolling movement. 

Make the same move in the breadcrumbs bowl. Then, lightly toss more crumbs to thoroughly and evenly cover the balls in crumbs. 

Set the ball to the parchment and proceed to do the same with the remaining risotto to make one of our favorite meals with leftover rice.

Step 5

It’s almost frying time! Pour the oil into a skillet, leave it on medium heat, and wait until it reaches about 350 degrees F.

You’ll know the oil is hot enough if a sprinkle of breadcrumbs starts sizzling immediately after getting in contact.

Step 6

Start adding the risotto balls into the oil. Make sure not to overcrowd the pan by adding too many at the same time.

Fry for about three minutes or until the balls reach a deep golden brown color. Then flip and wait the same amount of time.

Step 7

Once the balls are cooked, you should transfer them onto the previously prepared paper towel baking sheet. Drain the balls for the next two minutes, sprinkle with Parmesan, and serve with marinara sauce.

  • 1 cup leftover rice
  • One egg
  • One onion
  • 4 tbsp vegetable oil
  • 2 tbsp cornstarch
  • 2 tbsp fresh parsley
  • 1 tsp kosher salt

Instructions

Step 1

Start by heating the oil. Get a pan, pour four tablespoons of vegetable oil inside, and turn on the stove.

Step 2

While the oil is warming up, mix all of the ingredients.

Step 3

Once the oil is hot enough, add a spoonful of batter. Then press down on the mix and make a flat rice fritter.

Step 4

Fry the patties until one side reaches a golden brown color. Then, flip and fry for the same amount of time.

Step 5

The only thing left is to drain the fritters on a paper towel and serve.

Leftover Rice Ideas – Cinnamon Rice Pancakes

Cinnamon pancakes may be one of the oddest uses for cooked rice, but they are also the tastiest. You probably expect pancakes to be fluffy and with no rice, but don’t be skeptical if you’ve never tried this recipe.

Regardless of your expectations, the cinnamon rice dessert is worth a shot. So, check the ingredients, and learn how to make this unusual treat.

Ingredients

  • One egg
  • 1 1/2 cup leftover rice
  • 1 tbsp oil
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

Step 1

Combine everything but the oil in one bowl. Make sure it’s evenly mixed.

Step 2

Get a large non-stick skillet and pour 1/2 tablespoon of cooking oil inside. To make the pancakes similar in size, get a 1/4 cup measuring cup. Then, fill it with leftover rice, and put it onto the hot skillet.

Press down the rice using a spatula until you get a pancake-like shape. Do this for three pancakes.

Step 3

The pancakes will need only a few minutes on each side. So, fry until they are browned and crispy on the outside. Make sure that the eggs have set before you try to flip the patties.

Once you’re sure that the first side is finished, flip the pancake and repeat the process.

Step 4

Once the first batch of pancakes is completed, add the remaining oil and fry the remaining rice mixture.
